Traditional Method
Fuorionda is proof that tradition and modernity aren’t opposites: they’re accomplices. It comes from early bunch thinning and a white vinification of red grapes, following the traditional method with every step carried out rigorously by hand: tirage, riddling, coup de poignée, remuage, disgorgement à la volée. The result is a sparkling wine that unites the most rigorous craftsmanship with a free, contemporary spirit. Fuorionda is for those who love things done well and enjoyed without rigidity.
Enjoy it at the start of an evening that hasn’t yet decided what to become, with a pizza in the middle of the table and everything still possible.
Pour it for a long aperitif, among cured meats, cheeses and someone who always pours another glass.
Enjoy it during an unhurried summer lunch, with a paper cone of fried fish and hands that smell of the sea.
Salmon pink in colour, it is characterised by fruity and floral aromas and a fresh, savoury finish.
The bubbles are creamy and deliberately delicate, to leave room for the varietal red fruit.
An “all-meal” sparkling wine for aperitifs and starters, first and main courses, and after dinner.
Early harvest of red grapes, carried out by hand in the second half of August. The harvest coincides with the thinning of the bunches, followed by white winemaking. Must and skins are in contact only during pressing.
Vinification in steel at a controlled temperature of 18°C.
