Fermentation in steel tanks at a controlled temperature between 23° and 27°C, preceded by a saignée, with 3-4 pump-overs a day and at least 3 délestages during the whole winemaking process.
Aged for 12 months in steel tanks, to enhance the varietal characteristics. Aged in bottle for at least 6 months.
Serving temperature: 16°-18°C. Alcohol: 13.5% vol.
