Galatea exists only when nature decides. Produced exclusively in the vintages when Malvasia Puntinata reaches its fullest expression, it’s a bold interpretation that defies convention: a slightly late harvest, fermentation and ageing in chestnut casks, just as in the old days. The result is a wine that redefines the boundaries of white: golden, velvety, with a complexity that speaks of patience, courage and the talent of knowing how to wait for the right moment.

Deep, bright golden yellow in colour. A perfect union between the aromas of Malvasia Puntinata and chestnut wood: peach, apple and honey intertwine with vanilla, caramel and cinnamon. A dry, elegant and soft taste that leaves the mouth velvety.
A bold interpretation of Malvasia Puntinata, Galatea is a wine to experiment with in terms of pairings: traditional first courses, fish dishes, blue cheeses, end of meal — or simply as a meditation wine.
The Malvasia is left to slightly over-ripen on the vine, then hand-harvested into crates in the second half of September.
Fermentation in steel tanks at a controlled temperature of 17.5°C; at the end of the tumultuous fermentation, the must is moved into chestnut barriques where it finishes fermenting.
Aged for about 9 months in the same chestnut barriques, then 3 months in steel. Rested in bottle for about 2 months before release.
Bottles sealed with hand-applied shellac.
Serving temperature: 12°-14°C. Alcohol: 14% vol.
